Wouldn't this be a great project for colorforth? 

Create a video phone?

1. UDP networking (done, right?)
2. Firewire driver(s)
3. Simple audio compression
4. Simple video compression
...
5. USB 2.0 drivers

iSightAV provides firewire based video and audio. It does
autofocus and echo cancellation in the camera.

Video phones don't do much so this could be very simple
and very usefull.
